RECIPE: WHEAT-FREE, DAIRY-FREE OAT BARS

I shared my recipe for these delicious oat bars on my Instagram page the other day, and now that I have started up a blog too, I thought it might be nice to feature the recipe here. These are the go-to homemade snack in our house – they’re delicious, dairy-free, wheat-free, freezer-friendly and completely waste-free. No packaging or disposables required!

If you do freeze these, make sure you place them in a single layer (to avoid the bars clumping together), then remove in the morning, pop in a container and your snack will be ready to eat by morning tea!

Here’s the recipe:


OAT BARS (WHEAT-FREE, DAIRY-FREE, FREEZER-FRIENDLY)

Ingredients

  • 1 cup quick oats
  • ¾ cup gluten-free plain flour
  • 1 tsp baking powder
  • ⅔ cup desiccated coconut
  • ⅔ cup brown sugar
  • Chopped dried fruit and nuts of choice (Just use whatever you have. I use chopped walnuts, dark chocolate and raisins – perhaps about ¼ cup of each)
  • 1 heaped tbsp of natural peanut butter
  • 125g melted coconut oil
  • 2 eggs, lightly whisked
  • ½ tsp vanilla essence (here’s how to make your own)

Method

Combine all dry ingredients in a large mixing bowl, then add the wet ingredients. Stir well with a spoon. The mixture will be very sticky. Press into a lightly greased rectangular non-stick pan and bake at 180°C (355°F) for about 20 minutes, or until golden. The middle will still be a little soft, but will firm up upon standing. Allow to cool completely in pan before slicing into bars (otherwise they will crumble!).
